Tabbouli Salad

(Makes 4 servings)

INGREDIENTS

  • 1 large bundle fresh parsley, Italian or curly (approx. 2 cups, rough chopped)
  • 1/4 cup mint (rough chopped)
  • 1 large bell pepper (diced)
  • 1 avocado (diced)
  • 1 large tomato (chopped)
  • 2-3 Tbsp lemon juice
  • 1-2 Tbsp extra virgin olive oil
  • salt and pepper to taste

OPTIONAL

  • 1/3 cup red onion (diced)

INSTRUCTIONS

  1. Add parsley, mint, bell pepper, avocado and tomato to mixing bowl.
  2. Top with lemon juice, olive oil, salt, and pepper and toss to combine.
  3. Add onion at this time if desired (optional).
  4. Taste and adjust flavour, adding more lemon juice for acidity, salt and pepper for overall flavor, or olive oil if too dry.
  5. Serve immediately.
