Tabbouli Salad

(Makes 4 servings)
INGREDIENTS
- 1 large bundle fresh parsley, Italian or curly (approx. 2 cups, rough chopped)
- 1/4 cup mint (rough chopped)
- 1 large bell pepper (diced)
- 1 avocado (diced)
- 1 large tomato (chopped)
- 2-3 Tbsp lemon juice
- 1-2 Tbsp extra virgin olive oil
- salt and pepper to taste
OPTIONAL
- 1/3 cup red onion (diced)
INSTRUCTIONS
- Add parsley, mint, bell pepper, avocado and tomato to mixing bowl.
- Top with lemon juice, olive oil, salt, and pepper and toss to combine.
- Add onion at this time if desired (optional).
- Taste and adjust flavour, adding more lemon juice for acidity, salt and pepper for overall flavor, or olive oil if too dry.
- Serve immediately.
